甲醛为国家明文规定的禁止在食品中使用的添加剂,在食品中不得检出,但不少食品中都不同程度检出了甲醛的存在。⑴存在于水发食品中。由于甲醛可以保持水发食品表面色泽光亮,可以增加韧性和脆感,改善口感,还可以防腐,如果用它来浸泡海产品,可以固定海鲜形态,保持鱼类色泽。因此,甲醛已经被不法商贩广泛用于泡发各种水产品中。市场上已经检出甲醛的水发食品主要有:鸭掌、牛百叶、虾仁、海参、鱼肚、鲳鱼、章鱼、墨鱼、带鱼、鱿鱼头、蹄筋、海蛰、田螺肉、墨鱼仔等,其中虾仁、海参和鱿鱼中的甲醛含量较高。⑵存在于面食、蘑菇或豆制品中。甲醛可以增白,改变色泽,故甲醛常被不法商贩用来熏蒸或直接加入到面食、蘑菇或豆制品中,不法商贩用“吊白块”熏蒸有关食品增白时,也可以在食品中残留甲醛。已经检出甲醛的有关食品有:香菇、花菇、米粉、粉丝、腐竹等。

When illegal traders fumigate relevant food with "hanging white block", they can also leave formaldehyde in the food. Formaldehyde has been detected in related foods: mushrooms, mushrooms, rice flour, vermicelli, beancurd, etc.
